Imy's Classic Vanilla Cupcakes
Ingredients:
125g softened salted butter
3/4 cup caster sugar
3 eggs (separated)
3/4 cup buttermilk
1 tsp vanilla essence
1 1/2 cups of flour
3 tsp Baking powder
Method:
- Preheat your oven to 180 degrees Celsius and line your cupcake trays with cup cases or squares of parchment paper.
- Cream the butter and sugar with an electric beater until light and fluffy.
- Next, incorporate the egg yolks, one at a time.
- Add the vanilla essence and combine.
- Then, add the flour and baking powder alternating with the butter milk.
- Lastly, add the egg whites in slowly, and mix with a metal spoon, to prevent the mixture from over heating and curdling.
- Fill your cup cases 3/4 full using an ice- cream scoop.
- Bake the cupcakes till they are golden brown and test them using a skewer or a cake pick.
