Imy's Classic Vanilla Cupcakes

Ingredients:

125g softened salted butter

3/4 cup caster sugar

3 eggs (separated)

3/4 cup buttermilk

1 tsp vanilla essence

1 1/2 cups of flour

3 tsp Baking powder

 

Method:

  1. Preheat your oven to 180 degrees Celsius and line your cupcake trays with cup cases or squares of parchment paper.
  2. Cream the butter and sugar with an electric beater until light and fluffy.
  3. Next, incorporate the egg yolks, one at a time.
  4. Add the vanilla essence and combine.
  5. Then, add the flour and baking powder alternating with the butter milk.
  6. Lastly, add the egg whites in slowly, and mix with a metal spoon, to prevent the mixture from over heating and curdling.
  7. Fill your cup cases 3/4 full using an ice- cream scoop.
  8. Bake the cupcakes till they are golden brown and test them using a skewer or a cake pick.
